Vinaigrettes and Other Dressings : Michele Anna Jordan, who according to Mollie Katzen is "the quintessential expert on California cuisine," has been perfecting her dressing-making craft over several decades as a chef, food columnist, and cookbook author. About half of the dressings in her new book are riffs on the classic vinegar-and-olive-oil vinaigrette. The remaining recipes include milk- and cream-based dressings.
